Avocado Chicken salad pinwheels are a great appetizer, light lunch, or for a picnic! Tortillas rolled up with a creamy avocado chicken salad and some cheese. Family approved and so delicious.
Ingredients
  • 2 1/2 cups shredded chicken
  • 2 avocados, smashed
  • 1/4 cup sour cream
  • juice of 1 lime
  • 1/4 cup thinly sliced green onions
  • 2 tablespoons chopped cilantro
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1 cup shredded cheese (I use Monterey Jack)
  • Burrito size flour tortillas (you'll use about 5-6 of them)
Instructions
  • Combine all ingredients (except the tortillas) into a mixing bowl and mix well until everything is combined.
  • Using a spatula spread some avocado chicken salad onto a tortilla, making sure to spread to the edge. Roll up tight. Wrap the roll in some saran wrap and place in the fridge. Repeat with remaining flour tortillas until the chicken salad is gone.
  • Refrigerate for 30 minutes. Slice and put on serving plate.
